When frisella meets couscous, tradition becomes innovation

A 100% Italian innovation

Friscous® is a registered Salento patent, proof of an idea that is truly unique in the world. A product that speaks of roots, ingenuity, and territorial identity. On this page you will also find the official patent certificate.

Living sourdough since 1970

Every day we care for u vagnone, our living sourdough starter, fed at dawn and at sunset. It is what gives depth of aroma, digestibility, and a natural crunch unlike any other.

36 hours of slow drying

No baking, no industrial shortcuts: an artisanal process that respects the rhythms of nature. 36 hours at low temperature to preserve aromas, nutrients, and authenticity.

Two souls, infinite possibilities

Crunchy — just as it is, ready immediately, ideal as a gourmet topping.

Creamy — hydrated in 30–60 seconds, it becomes a soft, fragrant Salento couscous.

Friscous® is designed for chefs, restaurateurs, and food lovers who seek authenticity without compromise: a simple gesture, a deep flavor, an innovation born from tradition.
