1933 – The Dawn

Where it all begins

It all begins in a small countryside oven, in the heart of Salento. Grandfather Antonio grew ancient grains. Every dawn, Grandmother Assunta awakened the family sourdough starter, feeding it with the same care reserved for a child. The scent of freshly baked bread mingled with the warmth of the oven and flour-dusted hands. This is how “u vagnone” began its long journey. A journey that continues to this day.
1970 – Fidelity

Choosing one’s own path

When agriculture was rushing toward industrialization, Father Gaetano, the youngest of four brothers, chose a different way:to keep sowing Cappelli wheat alongside his centuries-old olive trees.

“If it nourished my grandparents, it will nourish our grandchildren too,” he would say to Mother Maria.

Every morning she renewed the strength of “u vagnone,” which transformed golden grain into bread with a familiar aroma.

It wasn’t just food: it was proof that fidelity to the land can endure over time.

2017 – The Rebirth

Turning memory into the future

There was a risk that everything would be lost. A heritage of flavors, gestures, and stories—destined to fade into silence.

“We couldn’t allow that,” says Francesco. “U vagnone couldn’t remain just a memory.”

He brought together lifelong friends: Paolo, Massimo, and Renato. The ones with whom he had shared courtyards, hard work, and complicit silences. Together they made a solemn commitment—to give the future back to memory.

Not out of nostalgia, but to keep nourishing who we are. So that our land can continue to tell its story. So that tomorrow may have deep roots.

We bring our Friscous®. We season it the way it has always been done: oil and water.
